Lysozyme

Lysozyme (LZ) is a 14.4 kDa enzyme, with strongly basic properties, soluble in water but not in common organic solvents nor in concentrate saline solution. Lysozyme is present in vertebrates, invertebrates, plants, bacteria and phages. In humans, it is abundant in a number of secretions, such as tears, saliva, mucus and mother’s milk.

 
Antibacterial

LZ is commonly known for its muramidase activity, mostly against Gram+ bacteria.

Immunostimolant

LZ is known to be capable to induce a systemic immunostimulation after oral administration, in preclinical experimental models as well as in clinical trials, independently of its enzymatic activity.

AGE Scavenging
(advanced glycation end-products)

LZ binds AGE with high affinity (KD=50 nM), promoting the capture, sequestration and disposal of toxic AGE formed in vivo.
AGE are an heterogeneous group of compounds which multi-step formation start, under physiological conditions, by a non-enzymatic glycation reaction of reducing sugars and proteins (Maillard reaction). A sustained formation and tissue accumulation of AGE, typical of the chronic hyperglycaemia, induces structural and functional tissue modifications.
